The producers use sea salt from the KUMANO area, which is famous for Kumano Kodo, world heritage sacred sites and pilgrimage routes in the Kii mountain range. The process of making this salt is cooking the natural sea salt with a wood fire and dry them with the sun only by hand. 

They use Kishu “Bincho-tan” charcoal, which is famous for high-quality charcoal since the Edo era.

Charcoal Salt is used to brighten the flavor of ingredients.
