WHAT IS KANTEN?

“KANTEN” means dried Tengusa, also called Agar. Tengusa is a seaweed of the family Gelidiaceae, native to the Pacific coast of the United States, Mexico, Chile, Korea and Japan. It grows on rocks along the coast of Japan.

HISTORY OF KANTEN

Since the Nara era 710-794 CE, people have been eating “TOKOROTEN”, which is simply boiling Tengura(agar) and solidifies when cooled.

In the Edo era, it was around 1658s. In Kyoto, one TOKOROTEN owner forgot it outside of his shop all night in winter so that it is freeze at night and the sun melted the moisture of it, then dried it out completely. So, this is called “KANTEN”.

KANTEN doesn’t have many calories, average 100g=3kcal. It has a neutral flavor, so it matches with almost any foods, also it has a nice texture. It is popular for diet foods. There is Kanten noodle soup, Agar jellies and it is high in dietary fiber. 

There are some suggestion recipes, Shio Konbu KANTEN salad with cucumber, green onion and sesame oil, Kanten can be added on any kind of soups. Simply adding on the top of any soup, you can enjoy the texture and absorb the flavor of soup.
