They use sea salt from the KUMANO area, which is famous for Kumano Kodo, world heritage sacred sites and pilgrimage routes in the Kii mountain range. The making of this product is, reducing the natural sea water with a wood fire and then drying the harvested salt crystals in the sun, the process is only by hand. Once the desired dryness is achieved ground dried plum is added. This especially matches well with meat, raw fishes and cocktails.
