This Vinegar is made by an “Umeboshi” (pickled ume plum) company in WAKAYAMA prefecture. This pink vinegar is the byproduct of making pickled plums with red Shiso leaves, known as Japanese perilla. This leave creates pink color and can be used as natural coloring instead of beetroot. You can make own pickles with this vinegar. This product contains large quantities of salt, so it is commonly mixed with water or oil to be used as dressings or seasoning.
